Originally from Melbourne, Australia, Sam Ross is a world-renowned
bartender and bar owner. As the creator of cocktails like the Penicillin
and Paper Plane, Ross's ingenuity served an important role in spurring
the modern cocktail revolution. Today, you can find him continuing to
innovate at his own bar on Manhattan's Lower East Side.

Larceny's smooth Wheated profile provides the ideal
backbone for Ross’s holy trinity of sweet, sour,
and bitter notes. Try this equal parts
recipe and enjoy a balanced and exciting sipping experience.
Ingredients
- ¾ oz. Larceny Bourbon
- ¾ oz. Aperol®
- ¾ oz. Amaro Nonino Quintessentia®
- ¾ oz. Fresh Lemon Juice
Instructions
- 1 Combine all ingredients in a
shaker. Add ice and shake until
well chilled. - 2 Strain cocktail into a chilled
coupe or cocktail glass. - 3 Garnish with a paper plane
(optional).
Go the Extra Mile
Keep It Chilled
Prepare ahead of time! Chill your coupe glass in
the freezer for at least 30 minutes before mixing
to keep the finished cocktail crisp and achieve the
right aesthetic.
Swap the Bitter
Finding the Paper Plane too sweet for your taste?
Swap out Aperol® for Campari® to achieve a
more bitter cocktail.
Shake it Up
The key to a great Paper Plane is the froth.
Be sure to shake this cocktail vigorously to achieve
its signature foam finish.
Pour it Slow
After shaking vigorously, strain the cocktail through a single
Hawthorne strainer and pour slowly to keep the ice
shards out of the glass.
Add a Garnish
For Ross, the frothy finish is enough, but you
can always up the appeal by garnishing with a
lemon peel or a mini paper plane.
Swap the Amaro
Although there’s no true substitute for Amaro Nonino®
in a proper Paper Plane, Amaro Montenegro®
provides similar flavor qualities.
